Chef Joseph D’Alessandro
Director of Career Counseling
With experience in business, culinary arts, research and development, corporations large and small, proprietorship and executive search, Joseph D’Alessandro has a combination of skills, intuition and knowledge that greatly benefit our students in their quest for the right career. Joining The French Pastry School in 2010, Mr. D’Alessandro guides each full-time student through one-on-one counseling, making them aware of all the many opportunities that await them in the food and hospitality industries, and how and where they can best apply their skills after graduating from The French Pastry School.
At the age of 22, Mr. D’Alessandro became the Chef of a bustling 100-seat bistro in Chicago. He later joined Levy Restaurants’ burgeoning sports entertainment division where he progressed from Sous Chef to Executive Chef. He was involved with several PGA tournaments, stadium openings, Major League Baseball playoff events, events catering to 10,000 people, and a long-term consulting project for Marriott Hotels.
In 1995, Mr. D’Alessandro was recruited to the Rosebud Restaurant Group of Chicago, as Corporate Chef. During his tenure with Rosebud, Joseph revised menus and systems at all of the company’s restaurants. He was involved in all areas of concept creation, development and construction for the opening of Rosebud Theater District at Madison & Dearborn. In 1997, he formed his own company and opened a fine dining restaurant in Palatine, Illinois. An elegant 200-seat venue, D’Alessandro’s specialized in regional Italian cuisine. The restaurant enjoyed increasing popularity and received critical accolades.
Mr. D’Alessandro launched CuliMarketing and Strategic Hospitality Search in 2002, providing quality services with integrity to positively impact all types of hospitality businesses. Strategic Hospitality Search has many repeat clients from coast to coast, its recruiters placing executives and management talent at restaurants, hotels, catering companies, clubs and private estates.
As a result of impact made through a multi-year culinary consulting and mentorship arrangement with Tasty Catering Corporation of Elk Grove Village, Mr. D’Alessandro was appointed to their corporate board of advisors in 2004. In 2006, he was invited to be a partner in their business through ownership in the food processing company start-up, T.F. Processors, Inc. He served in culinary development and sales at T.F. Processors until 2007 when a full-time staff of six was hired, yet he remains a principal owner and director.
Mr. D’Alessandro serves on advisory boards for American Culinary Federation Windy City Professional Culinarians and routinely advises culinary and hospitality students on career growth and proper business communication. He also serves on corporation and trade organization boards, is an active member of many hospitality-related, hospitality-supporting, and charity-supporting organizations and clubs, and he has received numerous awards. Some of these accolades include the 2010 Outstanding Business Partner Award, Technology Center of DuPage; 2009 President’s Award, ACF Windy City Chapter; 2007 Associate Member of the Year, ACF Windy City Chapter; serving on the International Food Service Executives Association (IFSEA); the Illinois Restaurant Association (IRA); the Research Chefs Association (RCA); and the Food, Beverage & Equipment Executives (FBEE).
