Our dear friend Stuart Melling at Gastronomic SLC recently shared what he thinks is the next big dining trend in Salt Lake City. Spoiler alert: it’s plant-based dining. While I can give you a slew of great vegan restaurants cropping up, I am of course more interested in the desserts. Enter Passion Flour Patisserie.

Having opened their doors in June 2015, Passion Flour was one of the first tenants in the emerging Central 9th neighborhood. Chef/Owner Jessica Davies is introducing Salt Lake residents to a new world of vegan pastry, featuring classic French selections modified from the ones she learned to make at the French Pastry School in Chicago. It’s not easy to find flaky, “buttery” layers of a croissant without using actual butter or other animal byproducts, but Davies has it down!
